Using O2 and SO2 Detection in Wineries

Following on from our last application highlight, we are staying on the same theme of the beverage industry but tackling a slightly different application: wineries!
Why do you need O2 and SO2 Detection in Wineries?
Similar to breweries, Oxygen will be introduced at the beginning of the wine-making process to help the yeast ferment. However, after this process, Oxygen levels will need to be closely monitored, as certain wines require more or less Oxygen than others to get the required flavour and colour. For example, for young, fresh, fruity white wines exposure to as little oxygen as possible is required to get the desired flavour, whereas for a Pinot Noir, oxygen will be introduced to help bind tannins and achieve its pale red colour. Therefore, Oxygen depleting gases such as Nitrogen or Argon may be used regularly or stored on site, leading to concerns for Oxygen deficient atmospheres.
Throughout the process of winemaking, from fermentation all the way to bottling, unwanted bacteria may build up that can quickly spoil wines. So, winemakers will often introduce SO2 in a solid, liquid or gas form to act as a fumigant, killing the bacteria and keeping the wine at its optimal quality. Often winemakers may also introduce SO2 for its anti-oxidising qualities in wine. Similar to oxygen exposure, the amount of SO2 used will be determined by the type of wine and the flavour winemakers are aiming for. Due to the continual use of SO2, it is likely that gas tanks or alternative forms of SO2 are stored on site. And due to the highly toxic nature of SO2, it is important to monitor this gas closely to keep your team and your workplace safe.
